Ingredients
  

For the Noodles
  • 200 g Rice Noodles Can substitute with soba or zucchini noodles.
For the Protein
  • 200 g Chicken Shredded roasted chicken.
  • 200 g Tofu Marinated tofu.
For the Fresh Herbs
  • 30 g Cilantro Can substitute with parsley.
  • 30 g Thai Basil Can substitute with mint.
For the Vegetables
  • 100 g Lettuce Use kale or spinach for added nutrients.
  • 50 g Carrots Shredded.
For the Dressing
  • 2 tbsp Fish Sauce Can substitute with vegan fish sauce.
  • 2 tbsp Lemon Juice Adjust to taste.
For the Toppings
  • 50 g Fried Shallots Can substitute with crispy garlic.
  • 30 g Crushed Peanuts Leave out for nut-free version.

Method
 

Preparation Steps
  1. Prepare the Dressing: In a small saucepan, combine fish sauce, sugar, lemon juice, and tamarind paste. Heat over medium heat, stirring frequently for about 5 minutes until thickened and fragrant.
  2. Cook the Rice Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions (5-7 minutes). Drain and rinse under cold water.
  3. Cook the Protein: Choose your protein. Shred roasted chicken or sauté marinated tofu slices for about 5 minutes until golden. Cook shrimp by blanching in boiling water for 2-3 minutes.
  4. Chop the Vegetables and Herbs: Wash and chop your vegetables and herbs. Shred the lettuce, julienne the carrots, and chop cilantro and basil.
  5. Combine Ingredients in a Bowl: In a large mixing bowl, combine cooled rice noodles, dressing, cooked protein, vegetables, and herbs. Toss well.
  6. Garnish and Serve: Transfer to serving plates and garnish with fried shallots, crushed peanuts, lime, and chili. Serve immediately.
