Preparation Steps
- Prepare the Dressing: In a small saucepan, combine fish sauce, sugar, lemon juice, and tamarind paste. Heat over medium heat, stirring frequently for about 5 minutes until thickened and fragrant.
- Cook the Rice Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions (5-7 minutes). Drain and rinse under cold water.
- Cook the Protein: Choose your protein. Shred roasted chicken or sauté marinated tofu slices for about 5 minutes until golden. Cook shrimp by blanching in boiling water for 2-3 minutes.
- Chop the Vegetables and Herbs: Wash and chop your vegetables and herbs. Shred the lettuce, julienne the carrots, and chop cilantro and basil.
- Combine Ingredients in a Bowl: In a large mixing bowl, combine cooled rice noodles, dressing, cooked protein, vegetables, and herbs. Toss well.
- Garnish and Serve: Transfer to serving plates and garnish with fried shallots, crushed peanuts, lime, and chili. Serve immediately.
