  • 2 cups cooked white beans (cannellini or navy)
For the Marinade
  • ½ cup fresh herbs (parsley, cilantro, basil, dill, tarragon, mint)
  • ½ cup chopped roasted red peppers or fresh bell peppers
  • 1 finely chopped shallot or red onion
  • 2 cloves minced garlic
  • ¼ cup extra-virgin olive oil
  • 1 whole lemon (zested and juiced) adjust to taste

  • 1 teaspoon red pepper flakes optional
  • to taste ground black pepper

Method
 

Combine Ingredients
  1. In a large mixing bowl, add 2 cups of cooked white beans, ½ cup of finely chopped fresh herbs, and ½ cup of chopped roasted red peppers. Then, sprinkle in 1 finely chopped shallot, 2 cloves of minced garlic, and a generous drizzle of ¼ cup of extra-virgin olive oil. Pour in the juice of 1 lemon, along with salt and pepper to taste, mixing everything well until the beans are fully coated.
Add Seasonings
  1. Sprinkle in about 1 teaspoon of red pepper flakes and an additional pinch of ground black pepper. Stir everything together gently to ensure the spices distribute evenly throughout the mixture.
Marinate the Beans
  1. Cover the mixing bowl with plastic wrap or a lid and refrigerate for at least 2 hours or overnight for maximum flavor infusion.
Serve and Enjoy
  1. Remove the bowl from the fridge and give it a gentle toss to refresh the mixture. Serve chilled or at room temperature, perfect for toasted bread, salads, or as a side dish.
