- Season the chicken thighs generously with salt and pepper on both sides. Set aside.
- Heat two tablespoons of olive oil in a skillet over medium-high heat for about 2 minutes.
- Add the seasoned chicken thighs to the skillet and sear for 5-7 minutes on each side until cooked through.
- Remove the chicken from the skillet and cover lightly with foil to keep warm.
- In the same skillet, reduce heat to medium, add minced garlic, and sauté for 1-2 minutes until fragrant.
- Pour in ½ cup of Irish whiskey and scrape the browned bits from the bottom of the pan.
- Stir in 1 cup of heavy cream and let the sauce simmer for 3-5 minutes until thickened.
- Return the chicken to the skillet, coating it well in the sauce, and let simmer for 2-3 minutes.
- Garnish with parsley or chives and serve immediately.
