  • 1 cup Bulgur Wheat or substitute with quinoa or finely chopped cauliflower
  • 2 pieces Pita Bread day-old or toasted shortly before serving
For the Vegetables
  • 1 cup Fresh Parsley or substitute with fresh mint or cilantro
  • 2 cups Tomatoes ripe and seasonal
  • 1 cup Cucumber firm varieties, peeled if desired
  • 1 cup Radishes omit or replace with bell peppers if preferred
For the Dressing
  • 1/4 cup Lemon Juice freshly squeezed
  • 1/3 cup Olive Oil high-quality extra virgin
  • 1 tablespoon Sumac or substitute with lemon zest mixed with paprika

Method
 

Preparation Steps
  1. Rinse the bulgur wheat under cold water and soak it for about 15-20 minutes. Drain excess water and set aside.
  2. Preheat your oven to 375°F (190°C). Cut pita bread into pieces and toast for 10-12 minutes until golden.
  3. Finely chop parsley, tomatoes, cucumber, and radishes. Combine in a large mixing bowl.
  4. In a small bowl, whisk together lemon juice, olive oil, and sumac until combined. Adjust seasoning if necessary.
  5. Add bulgur to the chopped vegetables, pour the dressing over, and fold gently to combine.
  6. Serve the salad in dishes and sprinkle toasted pita on top right before serving.
