Method
 

Cooking Instructions
  1. Cream together unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time and blend in ube halaya.
  2. Sift in all-purpose flour and mix until just combined to form cookie dough.
  3. Cover dough with plastic wrap and refrigerate for at least 1 hour.
  4. Preheat oven to 350°F (175°C). Roll dough into 1-inch balls and coat with powdered sugar. Place on a lined baking sheet and bake for 10-12 minutes.
  5. Allow cookies to cool completely on a wire rack.
  6. Beat together softened butter and sifted powdered sugar until fluffy. Gradually mix in coconut cream until smooth.
  7. Spread or pipe coconut filling onto a cooled cookie, top with another cookie, and repeat for all cookies.
  8. Dust with extra powdered sugar before serving. Store unfilled cookies at room temperature for up to 3 days.
