  • 1 Large Egg well beaten for egg wash

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
  2. In a medium mixing bowl, cream together the cold salted butter, granulated sugar, light brown sugar, and vanilla extract until smooth and fluffy.
  3. Gradually mix in the all-purpose flour, shredded coconut, and cinnamon until just incorporated.
  4. Divide the dough in half and shape each portion into a log, then wrap tightly in plastic wrap and chill for at least 1½ hours.
  5. Brush the outside of each chilled log with beaten egg, roll in shredded coconut, and slice into ¼-inch thick rounds.
  6. Bake the cookies for 10-12 minutes, until lightly golden on the edges.
  7. Let cookies cool slightly on the baking sheets before transferring them to a wire rack to cool completely.
