- Preheat your oven to 350°F (175°C) and prepare two baking sheets with parchment paper.
- In a medium mixing bowl, cream together the cold salted butter, granulated sugar, light brown sugar, and vanilla extract until smooth and fluffy.
- Gradually mix in the all-purpose flour, shredded coconut, and cinnamon until just incorporated.
- Divide the dough in half and shape each portion into a log, then wrap tightly in plastic wrap and chill for at least 1½ hours.
- Brush the outside of each chilled log with beaten egg, roll in shredded coconut, and slice into ¼-inch thick rounds.
- Bake the cookies for 10-12 minutes, until lightly golden on the edges.
