- Pat the shrimp dry and season with salt and black pepper. Trim the asparagus to your desired length, then mince the garlic and grate the ginger.
- In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry.
- Heat olive oil in a large pan over medium-high heat. Add the asparagus and stir-fry for 2-3 minutes until tender-crisp. Remove from pan.
- In the same pan, add shrimp, garlic, and ginger. Cook for 2 minutes per side until shrimp are pink and opaque.
- Reduce heat to medium, pour sauce over shrimp, and cook for 1-2 minutes until sauce thickens.
- Return asparagus to the pan, toss everything for another 1-2 minutes, garnish, and serve hot over rice or noodles.
