- Pat the shrimp dry and season with salt and black pepper. Trim the asparagus to your desired length, then mince the garlic and grate the ginger.
- In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry. Set aside.
- Heat a tablespoon of olive oil in a large pan over medium-high heat. Add asparagus and stir-fry for 2-3 minutes until tender-crisp. Remove asparagus and set aside.
- In the same pan, add another splash of oil if needed, then add the shrimp, garlic, and ginger. Cook for about 2 minutes per side until the shrimp are pink.
