Ingredients
  

For the Shrimp

  • 1 tablespoon Olive Oil (or Sesame Oil) Use sesame oil for a nuttier flavor.
  • 2 cloves Garlic Minced cloves are preferred.
  • 1 inch Ginger Grated, freshly preferred.
  • 1/2 teaspoon Red Pepper Flakes Optional, adjust to taste.

For the Veggies
  • 1 bunch Asparagus Alternatives: broccoli, snap peas, or bell peppers.
For the Sauce
  • 1/2 cup Sweet Chili Sauce Consider a homemade or low-sugar version.
  • 2 tablespoons Soy Sauce Tamari for gluten-free.
  • 1 tablespoon Honey Use agave syrup for a vegan alternative.
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Cornstarch Mix with water before adding to sauce.
For Garnish (optional)
  • 1 tablespoon Sesame Seeds
  • 2 tablespoons Green Onions Chopped.
  • 1 lime Lime Wedges For serving.

Method
 

Preparation
  1. Pat the shrimp dry and season with salt and black pepper. Trim the asparagus to your desired length, then mince the garlic and grate the ginger.
  2. In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry.
  3. Heat olive oil in a large pan over medium-high heat. Add the asparagus and stir-fry for 2-3 minutes until tender-crisp. Remove from pan.
  4. In the same pan, add shrimp, garlic, and ginger. Cook for 2 minutes per side until shrimp are pink and opaque.
  5. Reduce heat to medium, pour sauce over shrimp, and cook for 1-2 minutes until sauce thickens.
  6. Return asparagus to the pan, toss everything for another 1-2 minutes, garnish, and serve hot over rice or noodles.
