Step-by-Step Instructions
  1. Pat the shrimp dry and season with salt and black pepper. Trim the asparagus to your desired length, then mince the garlic and grate the ginger.
  2. In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry. Set aside.
  3. Heat a tablespoon of olive oil in a large pan over medium-high heat. Add asparagus and stir-fry for 2-3 minutes until tender-crisp. Remove asparagus and set aside.
  4. In the same pan, add another splash of oil if needed, then add the shrimp, garlic, and ginger. Cook for about 2 minutes per side until the shrimp are pink.
  5. Reduce heat to medium and pour the sauce mixture over the shrimp. Cook for 1-2 minutes until sauce thickens.
  6. Return asparagus to the pan and toss everything together for another 1-2 minutes.
