Step-by-Step Instructions for Smash Dumpling Tacos
  1. In a mixing bowl, combine plain flour and salt. Gradually stir in boiling water until a rough dough forms. Knead for 5-7 minutes until smooth. Cover and rest for 30 minutes.
  2. Combine pork mince, spring onions, chives, coriander, garlic, and ginger in a bowl. Add soy sauce, sesame oil, vinegar, and egg. Season and mix well.
  3. Divide the rested dough into small pieces. Roll each into thin circles, about 4-5 inches. Place 1-2 tablespoons of filling in the center, fold over, and seal tightly.
  4. Heat oil in a skillet. Add dumplings and smash with a spatula to form tacos. Fry for about 2 minutes until golden and crispy.
  5. Add a splash of water, cover immediately, and steam for 1 minute to cook the filling while keeping it crispy.
  6. Remove the lid and cook for another 2-3 minutes for extra crispiness. Transfer to a serving plate and garnish with toppings.
