  • 1 medium Chopped Onion Shallots can be used or omitted.
  • 2 cans Chili Beans Alternatives include canned black beans or pinto beans.
  • 15 oz Tomato Sauce Crushed tomatoes can be used.
  • 1 packet Taco Seasoning Homemade seasoning can substitute store-bought.
  • 10 oz Rotel Original Can be replaced with fresh tomatoes and jalapeños.
  • 1/2 cup Water May not be necessary if sufficient liquid from beans and tomatoes is present.
For Serving
  • 8 oz Fritos Tortilla chips can be an alternative.
  • Taco Toppings (optional) Include cheese, lettuce, sour cream, and avocado.

Method
 

Directions
  1. In a large skillet, heat over medium-high temperature. Add the lean ground beef and chopped onions, cooking for about 6-8 minutes, until browned and onions are translucent. Drain any excess fat.
  2. Stir in the taco seasoning along with 1/2 cup of water, mixing thoroughly. Allow the mixture to simmer for an additional 2-3 minutes, then remove from heat.
  3. Lightly spray slow cooker with non-stick cooking spray. Add chili beans, tomato sauce, and Rotel Original, mixing well.
  4. Transfer the seasoned beef mixture into the slow cooker. Stir all ingredients together until evenly mixed.
  5. Cover the slow cooker and set to cook on high for 3-4 hours or on low for 5-6 hours.
  6. Serve by filling bowls with crunchy Fritos. Optionally add a base of rice, then spoon the beef mixture over the top and finish with taco toppings.

Notes
