- In a large skillet, heat over medium-high temperature. Add the lean ground beef and chopped onions, cooking for about 6-8 minutes, until browned and onions are translucent. Drain any excess fat.
- Stir in the taco seasoning along with 1/2 cup of water, mixing thoroughly. Allow the mixture to simmer for an additional 2-3 minutes, then remove from heat.
- Lightly spray slow cooker with non-stick cooking spray. Add chili beans, tomato sauce, and Rotel Original, mixing well.
- Transfer the seasoned beef mixture into the slow cooker. Stir all ingredients together until evenly mixed.
- Cover the slow cooker and set to cook on high for 3-4 hours or on low for 5-6 hours.
- Serve by filling bowls with crunchy Fritos. Optionally add a base of rice, then spoon the beef mixture over the top and finish with taco toppings.

Leftovers can be stored in an airtight container for up to 3-4 days or frozen for up to 3 months. For stove-top cooking, combine all ingredients in a pot and simmer for 20-30 minutes until heated through.
