- Pat the shrimp dry with paper towels and place in a large mixing bowl.
- Mince garlic, zest and juice lemon, chop parsley, and slice zucchini and bell peppers.
- Mix together cumin, red pepper flakes, and smoked paprika in a small bowl. Season shrimp with salt and black pepper, then toss with spice mixture.
- Heat skillet over medium-high, add butter and olive oil. Once melted, add shrimp in a single layer. Sear for 2-3 minutes, flip, and cook for another 30 seconds to 1 minute until opaque.
- Add minced garlic to skillet and sauté for about 30 seconds. Then add spice mixture, zucchini, and bell peppers, stir-frying for 2-3 minutes until tender-crisp.
- Return shrimp to skillet, drizzle with lemon juice and stir gently for 30 seconds to 1 minute. Adjust seasoning and mix in parsley before serving.
