For the Nachos
  • 12 oz Corn Tortilla Chips Opt for thicker chips to prevent sogginess.
  • 2 cups Monterey Jack Cheese Substitute with Oaxaca cheese for a different flavor.
  • 2 cups Sharp Cheddar Cheese Mild cheddar or pepper jack can be used for variation.
For the Toppings
  • 1 cup Cherry Tomatoes Diced bell peppers can also be used for added crunch.
  • 1/4 cup Red Onion Green onions can be used for a milder flavor.
  • 1/4 cup Pickled Jalapeños Use fresh jalapeños for a spicier kick.
  • 1/4 cup Fresh Cilantro Can substitute with parsley if needed.
  • 1 unit Lime Squeeze juice over nachos for a bright touch.

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of lean ground beef, breaking it apart as it cooks. Stir occasionally until cooked through, around 5 to 7 minutes.
  2. Once the beef is browned, add taco seasoning and 1/4 cup of water. Stir well, allowing it to simmer for 3 to 5 minutes until it thickens.
  3. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  4. Spread half of the 12 oz of corn tortilla chips in an even layer on the baking sheet. Add half of the shredded Monterey Jack and half of the sharp Cheddar cheese.
  5. Distribute the cooked beef evenly on top of the chips and cheese for a hearty base.
  6. Repeat layering with the remaining chips followed by the other half of the cheese mixture.
  7. Bake in the oven for 7 to 10 minutes until cheese is bubbly. Optionally, broil for 1 minute for a toasted top.
  8. Remove from oven, garnish with cherry tomatoes, red onion, jalapeños, cilantro and serve immediately with lime wedges.

Notes
