  • 1 cup Bell Peppers Any variety works well.
  • 2 cups Spinach Add just until wilted.
  • 1 medium Onion Sauté until translucent.
For the Seasoning
  • 3 tbsp Soy Sauce Low-sodium options recommended.
  • 1 tbsp Sesame Oil Use sparingly.
  • 1 tbsp Gochujang Optional for spice.
For the Garnish
  • 2 stalks Green Onions Slice thinly for presentation.

Method
 

Step-by-Step Instructions for Japchae
  1. Soak the sweet potato glass noodles in a bowl of hot water for 30 minutes, or until softened. Drain and set aside.
  2. In a large skillet, heat oil over medium-high heat. Add beef, cooking for 4-5 minutes until browned. Remove and set aside.
  3. In the same skillet, add carrots, bell peppers, and onions. Stir-fry for 3-4 minutes until vibrant. Add spinach for the last minute to wilt.
  4. Return the protein to the skillet with vegetables. Add soaked noodles, soy sauce, and sesame oil, and toss for 2-3 minutes.
  5. Garnish with green onions and serve warm.
