  • 1 teaspoon Paprika Optional

  • 1 tablespoon Dark Brown Sugar
Cooking
  • 2 cups Low Sodium Chicken Stock
  • 1 each Red Bell Pepper Diced or julienned
  • 1 each Green Bell Pepper Diced or julienned
  • 2 tablespoons Ketchup
  • 2 tablespoons Soy Sauce Optional
  • 3 tablespoons Olive Oil Or any neutral oil for frying

Method
 

Preparation
  1. Prepare the whole chicken by removing skin and excess fat; rinse thoroughly and chop into manageable sizes.
  2. In a large bowl, combine chicken with marinade ingredients; cover and refrigerate for at least an hour, preferably overnight.
Cooking Steps
  1. Heat olive oil in a Dutch oven over medium-high heat; sear marinated chicken for 5-10 minutes until golden brown.
  2. Add low sodium chicken stock and marinade; bring to a boil then reduce to a simmer and cover for about 20 minutes.
  3. Stir in ketchup; simmer uncovered for an additional 10 minutes or until sauce thickens.
  4. Remove bay leaves and thyme stems; serve hot over rice or favorite sides.
