  • 1 package frozen puff pastry thawed, measuring 25 cm x 25 cm (10" x 10")
  • 100 grams streaky bacon or middle bacon as a substitute
  • 3 tablespoons maple syrup can substitute with honey
For the Filling
  • 400 grams butternut or Jap pumpkin diced
  • 1 tablespoon olive oil optional for roasting
  • 50 grams butter for mashing
  • to taste salt
  • to taste pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 220°C (425°F). Prepare a baking tray with oil or grease.
  2. For the filling, roast diced pumpkin in olive oil for 20-25 minutes or microwave with water for 8 minutes.
  3. Cut the thawed puff pastry sheets in half and layer them on the baking tray.
  4. Pre-bake the layered pastry in the oven for 15 minutes.
  5. Spread the pumpkin filling over the pastry base, layer with bacon.
  6. Bake the assembled tart for 20 minutes until bacon is crispy and pastry is golden.
  7. Brush half of the maple syrup over the tart and return to the oven for 7-10 minutes.
  8. Remove from oven, brush with remaining maple syrup, and season with salt and pepper before serving.
