Method
 

Marinate the Chicken
  1. In a large bowl, combine the boneless skinless chicken thighs with jerk seasoning and a drizzle of olive oil. Mix thoroughly to ensure the chicken is well-coated. Cover and let it marinate for at least 15 minutes at room temperature or longer in the refrigerator.
Grill the Pineapple
  1. Preheat your grill to medium heat, around 350°F (175°C). Slice the ripe pineapple into thick rounds and grill each side for 3-4 minutes until caramelized.
Cook the Chicken
  1. Place the marinated chicken thighs on the hot grill. Cook each side for about 6-7 minutes until the internal temperature reaches 165°F (74°C).
Prepare the Coleslaw
  1. In a medium bowl, mix the coleslaw mix with mayonnaise, apple cider vinegar, honey (if using), salt, and pepper. Toss all ingredients until evenly coated.
Assemble the Sandwiches
  1. Start by placing a generous amount of grilled chicken on a burger bun. Layer the charred pineapple slices on top, followed by coleslaw.
Garnish and Serve
