Marinate the Chicken
- In a large bowl, combine the boneless skinless chicken thighs with jerk seasoning and a drizzle of olive oil. Mix thoroughly to ensure the chicken is well-coated. Cover and let it marinate for at least 15 minutes at room temperature or longer in the refrigerator.
Grill the Pineapple
- Preheat your grill to medium heat, around 350°F (175°C). Slice the ripe pineapple into thick rounds and grill each side for 3-4 minutes until caramelized.
Cook the Chicken

- In a medium bowl, mix the coleslaw mix with mayonnaise, apple cider vinegar, honey (if using), salt, and pepper. Toss all ingredients until evenly coated.

- Start by placing a generous amount of grilled chicken on a burger bun. Layer the charred pineapple slices on top, followed by coleslaw.
