- In a medium saucepan, combine 3/4 cup soy sauce and 3/4 cup sugar over medium heat. Stir until sugar dissolves.
- Add 1/2 cup crushed garlic, 1/4 cup chopped green onion, 1 tablespoon sesame oil, 1 teaspoon red chili flakes, and 1/2 teaspoon white pepper. Boil for 1 minute and remove from heat.
- In a large bowl, place 2 pounds of cubed chicken and pour 4-5 tablespoons of garlic sauce over it along with 1 tablespoon cornstarch and 1 tablespoon vegetable oil. Mix thoroughly and let marinate.
- In a separate bowl, whisk together 1 1/2 cups flour, 1/2 cup cornstarch, and 1/2 teaspoon salt. Add 3 tablespoons of garlic sauce and mix until forms clumps.
- Heat vegetable oil in a frying pan until it shimmers. Coat each piece of marinated chicken in the dry mixture and fry in batches for 5-7 minutes until golden brown.
- Once fried, toss the chicken in the warm garlic sauce or serve the sauce on the side. Pair with jasmine rice or fried rice.
