Step-by-Step Instructions for Egg Fried Rice
  1. If using fresh rice, cool it on a baking tray for 30 minutes. If day-old, break apart clumps.
  2. Heat oil in a wok, scramble eggs for 1-2 minutes and set aside.
  3. In the same pan, sauté the chopped white parts of green onions for 30 seconds. Optionally add minced garlic.
  4. Add the prepared rice to the skillet and stir-fry for 3-4 minutes.
  5. Pour in soy sauce and optionally sesame oil, then cook for another minute.
  6. Fold scrambled eggs and optional vegetables into the rice and warm through for 2 minutes.
  7. Remove from heat and sprinkle green onion tops over the mixture. Serve hot.
