Method
 

Preparation Instructions
  1. Start by bringing a large pot of water to a rolling boil over medium-high heat.
  2. Once boiling, add in the fresh sweet peas and cook them for 2-3 minutes until they're tender yet firm.
  3. Carefully drain the peas using a colander and rinse them under cold running water.
  4. In a large mixing bowl, add the cooled peas, crumbled feta cheese, and chopped fresh mint leaves.
  5. Squeeze in the juice of half a lemon, drizzle with extra virgin olive oil, and season with salt and pepper.
  6. Using a spatula, gently fold the ingredients together until evenly combined.
  7. Taste the mixture and adjust the seasoning with more salt, pepper, or lemon juice if desired.
  8. Transfer the salad to a serving bowl or individual plates and serve immediately.
