  • 8 oz Linguine or Fettuccine Pasta gluten-free pasta works well if needed
For the Sauce
  • 2 tbsp Olive Oil for sautéing
  • 1 medium Onion
  • 1 medium Red Bell Pepper
  • 1 medium Green Bell Pepper
  • 3-4 cloves Garlic minced
  • 8 oz Andouille Sausage can substitute with smoked sausage or chorizo
  • 1 lb Shrimp can substitute with chicken or scallops
  • 1 can Diced Tomatoes (14.5 oz can)
  • 1 cup Heavy Cream
  • 2 tbsp Cajun Seasoning to taste
  • Salt and Pepper to taste
  • 1/4 cup Fresh Parsley chopped
  • 1/2 cup Grated Parmesan Cheese

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and keep warm.
  2. Heat olive oil in a large skillet over medium heat. Add onion and bell peppers; sauté for about 5 minutes until softened.
  3. Stir in minced garlic and sliced sausage. Cook for 3-4 minutes until sausage is browned.
  4. Incorporate shrimp into the skillet and cook until pink and opaque, about 3-4 minutes.
  5. Add diced tomatoes and heavy cream. Stir and season with Cajun seasoning, salt, and pepper. Simmer for 5-7 minutes.
  6. Add the drained pasta, tossing for 2-3 minutes to coat evenly with sauce.
  7. Remove from heat and stir in parsley and Parmesan cheese. Serve immediately.
