  • 2 pieces Sausages Use any smoked sausages.
  • 200 grams Tofu Can be replaced with additional meat or omitted.
  • 200 grams Rice Cakes Can substitute with noodles if desired.
  • 1 piece Onion Any onion variety works.
  • 100 grams Enoki Mushrooms Substitute with shiitake or button mushrooms.
  • 1 cup Kimchi Adjust based on personal preference.
  • 200 grams Ramen Noodles Feel free to use any instant noodle variety.
  • 100 grams Cheese Optional but recommended, use mozzarella.
  • 2 stalks Green Onions Fresh garnish.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper. Whisk until well blended and set aside.
  2. In a large pot, layer Spam, sausages, diced tofu, and rice cakes. Add onion, enoki mushrooms, and kimchi on top.
  3. Pour the sauce over the layered ingredients and add enough chicken broth to cover partially. Heat until boiling, about 5-7 minutes.
  4. Stir in ramen noodles and cheese, cover, and simmer for 3-5 minutes until noodles are tender.
  5. Remove from heat and garnish with green onions. Serve hot over steamed rice.
