- In a medium bowl, combine minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper. Whisk until well blended and set aside.
- In a large pot, layer Spam, sausages, diced tofu, and rice cakes. Add onion, enoki mushrooms, and kimchi on top.
- Pour the sauce over the layered ingredients and add enough chicken broth to cover partially. Heat until boiling, about 5-7 minutes.
- Stir in ramen noodles and cheese, cover, and simmer for 3-5 minutes until noodles are tender.
- Remove from heat and garnish with green onions. Serve hot over steamed rice.
