  1. Cook rigatoni or ziti according to the package instructions until al dente, about 8-10 minutes. Drain and cool slightly.
  2. In a food processor, combine ricotta, asiago, romano, parmesan, mascarpone, tomato paste, half & half, and eggs. Blend until smooth.
  3. Fill each rigatoni noodle with the cheese mixture, packing it tightly to avoid leakage.
  4. For best results, freeze the stuffed pasta for 1-2 hours to help firm up.
  5. Mix beaten eggs in a bowl. Combine breadcrumbs with olive oil in a microwave-safe dish and microwave until golden.
  6. Dip each stuffed noodle in the beaten eggs, then roll in the breadcrumb mixture, coating evenly.
  7. Preheat air fryer to 370°F (190°C). Place stuffed pasta in a single layer and air fry for 4 minutes, shaking halfway.
  8. Serve with alfredo or marinara sauce for dipping.
