- Gather your ingredients and prep them: thaw corn, mince garlic, and cut Spam into cubes.
- Heat avocado oil in your wok and cook Spam cubes until golden brown, about 2 minutes.
- Sauté minced garlic and the white parts of green onions for about 30 seconds until fragrant.
- Add day-old Jasmine rice, breaking clumps and mixing with the oil for about 2-3 minutes.
- Create a well, add oil and pour in whisked eggs, then scramble into the rice.
- Add thawed corn, carrots, and peas, cooking for 2 minutes until tender.
- Return Spam and reserved sauce, drizzle sesame oil, and mix for 1-2 minutes.
- Garnish with green onion tops and nori strips, and drizzle sriracha if desired.
