- In a large mixing bowl, combine 1 pound of ground beef, 1 grated onion, ¼ cup of freshly chopped parsley, ¼ cup of mint, and spices such as cumin and paprika. Mix thoroughly and let sit for 10 minutes.
- Moisten hands with olive oil and shape mixture into elongated meatballs or oval patties, about 2 inches long. Place on a parchment-lined tray.
- Preheat oven to 350°F (175°C). Peel and chop 3 medium potatoes into bite-sized cubes. Toss with olive oil, salt, and pepper. Spread in a baking dish.
- Place formed kofta on top of the potatoes and bake for approximately 30 minutes until golden brown.
- In a medium bowl, whisk together ½ cup of tahini, the juice of 1 lemon, and 2 tablespoons of olive oil until smooth. Gradually add water to achieve a creamy consistency.
- Remove dish from oven and drizzle tahini sauce over kofta and potatoes. Return to oven for an additional 20 minutes.
- Let cool for a few minutes, garnish with additional herbs, and serve warm.
