  • 2 tablespoons Olive Oil Substitute with any neutral oil if desired.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 pound of ground beef, 1 grated onion, ¼ cup of freshly chopped parsley, ¼ cup of mint, and spices such as cumin and paprika. Mix thoroughly and let sit for 10 minutes.
  2. Moisten hands with olive oil and shape mixture into elongated meatballs or oval patties, about 2 inches long. Place on a parchment-lined tray.
  3. Preheat oven to 350°F (175°C). Peel and chop 3 medium potatoes into bite-sized cubes. Toss with olive oil, salt, and pepper. Spread in a baking dish.
  4. Place formed kofta on top of the potatoes and bake for approximately 30 minutes until golden brown.
  5. In a medium bowl, whisk together ½ cup of tahini, the juice of 1 lemon, and 2 tablespoons of olive oil until smooth. Gradually add water to achieve a creamy consistency.
  6. Remove dish from oven and drizzle tahini sauce over kofta and potatoes. Return to oven for an additional 20 minutes.
  7. Let cool for a few minutes, garnish with additional herbs, and serve warm.
