- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a high-speed blender, combine overripe bananas, cottage cheese, eggs, maple syrup (or honey), almond butter, and vanilla extract. Blend until smooth for 1-2 minutes.
- Add oat flour, baking powder, baking soda, sea salt, and cinnamon (if using). Blend gently until just combined.
- Fold in the chocolate chips by hand with a spatula for even distribution.
- Pour the batter into the lined loaf pan, smoothing the top. For cinnamon roll variation, layer with pecan filling before swirling.
- Bake for 45-48 minutes. Check for doneness with a toothpick; it should come out mostly clean with a few moist crumbs.
- Allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
