Dressing
  • 1 cup Greek Yogurt Choose full-fat for creaminess
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Salad
  • 2 cups Macaroni Pasta (elbows) Cooked according to package directions
  • 2 cups Fresh Broccoli Blanched
  • 6 slices Bacon Cooked until crispy
  • 1/2 cup Red Onion Finely diced

Method
 

Preparation
  1. In a medium bowl, combine Greek yogurt, apple cider vinegar, Dijon mustard, honey, salt, and black pepper. Whisk until smooth.
  2. Bring a large pot of salted water to a boil. Add macaroni and cook for 8-10 minutes. In the last 2-3 minutes, add broccoli florets. Drain and rinse under cold water.
  3. In a large skillet, fry chopped bacon over medium-high heat for 8-10 minutes until crispy. Drain on a paper towel.
  4. In a large serving bowl, combine drained macaroni, broccoli, bacon, and red onion. Pour dressing over and fold until coated.
  5. Let the salad rest at room temperature for 15-20 minutes before serving.
