  • 1 24-inch Baguette or gluten-free version
  • 2 tablespoons Olive Oil or melted butter
For the Buffalo Chicken Pizza
  • 2 cups Shredded Rotisserie Chicken or shredded tofu
  • 1/2 cup Buffalo-Style Hot Sauce adjust to taste or use barbecue sauce
  • 1/4 cup Ranch Dressing or Greek yogurt for a lighter version
  • 1 cup Mozzarella Cheese can substitute with vegan mozzarella
  • 1/4 cup Crumbled Blue Cheese omit for milder flavor or substitute with feta
  • 2 Scallions or green onions
  • 2 tablespoons Chopped Cilantro optional, can replace with parsley
For the Caramelized Shallots Pizza
  • 2 Shallots or yellow onions
  • 2 cloves Garlic
  • 1 cup Whole Milk Ricotta or cottage cheese
  • 1/2 cup Goat Cheese or omit for dairy-free version
  • 1 tablespoon Fresh Thyme Leaves or dried thyme
  • 1/4 cup Walnuts or pecans, omit for nut-free
  • 1 tablespoon Honey or maple syrup for vegan substitute
For the Pepperoni Pizza
  • 1 can Canned Whole Peeled Tomatoes or fresh tomatoes/pizza sauce
  • 1 tablespoon Fresh Oregano or dried oregano
  • 2 fillets Anchovy Fillets omit for vegetarian option
  • 1 cup Pepperoni or turkey pepperoni
  • 1/4 cup Pickled Pepperoncini Peppers or banana peppers

Method
 

Preparation Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette in half lengthwise using a sharp knife.
  3. Lightly brush the baguette with olive oil and toast for about 5 minutes.
  4. Combine shredded rotisserie chicken, buffalo-style hot sauce, and ranch dressing. Spread on baguette.
  5. Prepare the shallots and garlic in a skillet, then assemble on the baguette with ricotta, goat cheese, and other toppings.
  6. Spread canned tomatoes on baguette for the pepperoni pizza, add toppings, and bake.
  7. Bake assembled pizzas for 10-12 minutes until cheese is melted and bubbly.
  8. Slice the pizzas for serving and enjoy!
