- Preheat the oven to 160°C (320°F) and prepare your baking pans by lining them with parchment paper.
- In a mixing bowl, combine sugar, honey, eggs, sunflower oil, and ground cardamom (or cinnamon). Whisk until smooth and glossy, about 2-3 minutes.
- Sift in the all-purpose flour and baking powder. Mix gently until just combined, being careful not to overmix.
- Gradually pour in the brewed Earl Grey tea, stirring gently to achieve a smooth batter.
- Divide the batter evenly among the prepared pans and level the tops.

- Drizzle 2 tablespoons of honey on each warm cake as soon as they come out of the oven.
