Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Slice the Japanese sweet potatoes into 1-inch thick rounds.
  3. In a medium bowl, whisk together the white miso paste, maple syrup, and water until smooth.
  4. Heat a heavy-bottomed skillet over medium-high heat and add avocado oil. Sear the sweet potato rounds for 3–4 minutes on each side.
  5. Add butter to the skillet, allow it to melt, and swirl it with the sweet potatoes. Pour the glaze over them.
  6. Transfer the skillet to the oven and bake for 15 minutes, then baste with sauce and return for 5–10 minutes until fork-tender.
  7. Serve warm, drizzled with any remaining sauce and sprinkled with flaky sea salt.
