- Preheat the oven to 400°F (200°C).
- Slice the Japanese sweet potatoes into 1-inch thick rounds.
- In a medium bowl, whisk together the white miso paste, maple syrup, and water until smooth.
- Heat a heavy-bottomed skillet over medium-high heat and add avocado oil. Sear the sweet potato rounds for 3–4 minutes on each side.
- Add butter to the skillet, allow it to melt, and swirl it with the sweet potatoes. Pour the glaze over them.
- Transfer the skillet to the oven and bake for 15 minutes, then baste with sauce and return for 5–10 minutes until fork-tender.
- Serve warm, drizzled with any remaining sauce and sprinkled with flaky sea salt.
