Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut your eggplant into one-inch cubes. Toss the eggplant cubes with olive oil and season with salt and pepper.
  3. Spread the seasoned eggplant cubes evenly on the prepared baking sheet and roast for 20-25 minutes.
  4. In a small bowl, whisk together the miso paste, mirin, soy sauce, honey, ginger, and minced garlic until smooth.
  5. Once the eggplant is tender and slightly caramelized, coat it with the miso glaze.
  6. Return the glazed eggplant to the oven and roast for an additional 5-7 minutes until the glaze is bubbling.
  7. Remove from the oven and garnish with sesame seeds and chopped green onions if desired.
