Batter
  • 100 g Unsalted Butter browned
  • 40 g Plain / All-Purpose Flour or cake flour
  • 80 g Almond Meal or ground hazelnuts
  • 90 g Icing Sugar or granulated sugar
  • 1 pinch Salt to enhance flavor
  • 5 Egg Whites fresh
  • 1 tsp Vanilla Extract optional

Method
 

Baking Process
  1. Preheat your oven to 160°C (325°F) and prepare your financier pan by greasing it with butter and dusting with flour.
  2. Melt 100g of unsalted butter in a saucepan over low heat until browned, about 5-8 minutes.
  3. In a bowl, sift together 40g of plain flour, 80g of almond meal, 90g of icing sugar, and a pinch of salt.
  4. Lightly whisk 5 egg whites until bubbly and frothy, then fold in the dry ingredients.
  5. Fold the cooled brown butter into the batter, adding a teaspoon of vanilla extract if desired.
  6. Spoon the batter into the prepared molds, filling them three-quarters full, and sprinkle flaked almonds on top if using.
  7. Bake for 12-14 minutes until golden around the edges.
  8. Allow the financiers to cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.
