Baking Process
- Preheat your oven to 160°C (325°F) and prepare your financier pan by greasing it with butter and dusting with flour.
- Melt 100g of unsalted butter in a saucepan over low heat until browned, about 5-8 minutes.
- In a bowl, sift together 40g of plain flour, 80g of almond meal, 90g of icing sugar, and a pinch of salt.
- Lightly whisk 5 egg whites until bubbly and frothy, then fold in the dry ingredients.
- Fold the cooled brown butter into the batter, adding a teaspoon of vanilla extract if desired.
- Spoon the batter into the prepared molds, filling them three-quarters full, and sprinkle flaked almonds on top if using.
- Bake for 12-14 minutes until golden around the edges.
- Allow the financiers to cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.
