Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9"x13" baking pan by spraying lightly with nonstick spray.
- In a skillet over medium heat, cook the bacon until it reaches a chewy-crisp texture, approximately 8-10 minutes. Remove from the pan and chop.
- In a large mixing bowl, whisk together the eggs until frothy, then add the chopped bacon, half of the shredded cheese, spinach, cottage cheese, melted butter, and diced vegetables. Mix well.
- Sprinkle in the flour, seasoned salt, and black pepper into the egg mixture, and gently stir until combined.
- Pour the egg mixture into the baking pan, spreading it evenly. Top with remaining cheese, bacon, and red bell pepper.
- Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for an additional 20-30 minutes until the center is firm.
- Let the egg bake rest for 15-20 minutes before cutting into squares. Garnish with chopped green onions if desired.
