Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9"x13" baking pan by spraying lightly with nonstick spray.
  2. In a skillet over medium heat, cook the bacon until it reaches a chewy-crisp texture, approximately 8-10 minutes. Remove from the pan and chop.
  3. In a large mixing bowl, whisk together the eggs until frothy, then add the chopped bacon, half of the shredded cheese, spinach, cottage cheese, melted butter, and diced vegetables. Mix well.
  4. Sprinkle in the flour, seasoned salt, and black pepper into the egg mixture, and gently stir until combined.
  5. Pour the egg mixture into the baking pan, spreading it evenly. Top with remaining cheese, bacon, and red bell pepper.
  6. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for an additional 20-30 minutes until the center is firm.
  7. Let the egg bake rest for 15-20 minutes before cutting into squares. Garnish with chopped green onions if desired.
