- In a mixing bowl, combine 150g of sweet glutinous rice flour. In a saucepan, mix water, white sugar, coconut milk, and a splash of cooking oil. Heat over medium heat, stirring until it bubbles. Pour hot liquid over flour and stir until smooth.
- Lightly oil your hands, transfer the dough to a clean surface, and knead for about 10 minutes until smooth and elastic. If dry, add a tablespoon of water.
- Divide dough into 6-8 pieces, roll into balls, and flatten each into a disc about 1-inch thick.
- Heat a non-stick frying pan over medium-low heat and coat with cooking oil. Fry discs in batches for 4-5 minutes until golden, then flip and repeat.
- Remove from pan and let cool for a few minutes. Serve warm, drizzled with honey or with fresh berries.
