Preparation Steps
- In a medium mixing bowl, combine 8 ounces of softened goat cheese with 4 ounces of cream cheese. Blend until smooth and creamy.
- Fold in 2 tablespoons of honey into the cheese mixture until well incorporated.
- On a separate plate, mix together 6 ounces of crumbled bacon, 1 cup of finely chopped pecans, 1/2 cup of chopped dried cranberries, and 2 tablespoons of minced rosemary.
- Spoon the cheese mixture onto a piece of plastic wrap and shape it into a log, about 10 inches long.
- Remove the cheese log from the wrap and roll it in the bacon-nut mixture, ensuring it adheres on all sides.
- Place the log on a serving platter, surround with fresh arugula, cover with plastic wrap and refrigerate for at least 30 minutes.
