- In a large microwavable bowl, combine 4 cups of Honey Nut Chex, 4 cups of Cinnamon Chex, 1 cup of pecan halves, and 1 cup of dried banana chips. Stir well to ensure all ingredients are evenly mixed.
- In a separate small microwavable bowl, combine 1/2 cup of butter, 1 cup of brown sugar, and 1 teaspoon of cinnamon. Microwave on high for 2 minutes, stopping once to stir the mixture until the sugar dissolves completely.
- Once the butter mixture is melted, remove it from the microwave and add 1 teaspoon of banana extract and 1 teaspoon of rum extract. Stir everything together until well combined.
- Pour the warm syrup over the cereal mixture in your large bowl. Using a spatula, gently toss the mix to ensure every piece receives an even coating.
- After coating, spread the cereal mixture evenly in the bowl and microwave it for 3 minutes, stirring every minute to ensure even heat distribution.
- Once microwaved, carefully spread the Banana Foster Chex Mix onto baking sheets lined with parchment paper to cool completely.
