  • 1/2 cup Rock Sugar Adjust for sweetness.
  • 5 cups Water Ensure enough to cover ingredients.

Method
 

Cooking Steps
  1. Bring 5 cups of water to a boil in a medium saucepan. Add 1 cup of tapioca pearls and stir gently. Reduce heat to a simmer and cook for 15 minutes, then cover and rest for 10-15 minutes. Rinse under cold water.
  2. Peel and cut taro into cubes. In a separate pot, cover taro with water and add rock sugar. Boil, then simmer for 20 minutes until tender.
  3. Stir in 1 can of coconut milk into the cooked taro. Simmer for an additional 5 minutes, adjusting sweetness if needed.
  4. Drain cooked tapioca pearls and add to the taro-coconut mixture. Cook for an additional minute. Serve warm or chill overnight.
