Method
 

Preparation

  3. Spread a thin layer of mustard on one slice of whole grain bread.
  4. On the mustard-spread slice, arrange leafy greens, a scoop of the mash, extra artichokes, and cucumber. Top with the second slice of bread.
  5. Slice the sandwich in half and serve fresh. Store filling separately if prepping in advance.
