Method
 

Cooking Steps
  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté for about 10 minutes until soft and golden brown.
  2. Stir in the grated garlic and cook for 20-30 seconds. Add the tomato paste and mix thoroughly.
  3. Pour in the pureed canned tomatoes and water, and season with salt, black pepper, oregano, and sugar. Bring to a rolling boil.
  4. Once boiling, add the uncooked orzo pasta and boil for about 8 minutes, stirring frequently.
  5. Taste the soup and adjust seasonings as necessary.
  6. If the soup is too thick, add more water or broth to reach the desired consistency.
  7. Ladle into bowls and garnish with optional feta and herbs.
