Filling
- In a bowl, combine crab, Greek yogurt, Sriracha, soy sauce, and sesame oil; mix until coated.
Assembly
- Lay nori on a bamboo mat and spread with 1/2 cup rice, leaving a 1-inch border.
- Place crab mixture, cucumber, and avocado (if using) in the center; avoid overfilling.
- Roll nori tightly, sealing the edge with water; slice into 6-8 pieces with a damp knife.
Serving
- Garnish sushi rolls with sesame seeds and serve with soy sauce, wasabi, and pickled ginger.
