Method
 

Preparation
  1. Rinse sushi rice under cold water until water runs clear; this takes about 2-3 minutes.
  2. Cook rice in a rice cooker or pot with an appropriate water ratio until tender, about 15 minutes.
  3. Transfer rice to a bowl, drizzle in vinegar, sugar, and salt; fold gently and cool for 15 minutes.
Filling
  1. In a bowl, combine crab, Greek yogurt, Sriracha, soy sauce, and sesame oil; mix until coated.
Assembly
  1. Lay nori on a bamboo mat and spread with 1/2 cup rice, leaving a 1-inch border.
  2. Place crab mixture, cucumber, and avocado (if using) in the center; avoid overfilling.
  3. Roll nori tightly, sealing the edge with water; slice into 6-8 pieces with a damp knife.
Serving
  1. Garnish sushi rolls with sesame seeds and serve with soy sauce, wasabi, and pickled ginger.
