Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine 1 cup of Bisquick with 1 scoop of vanilla PEScience Select protein powder. Slowly add in ¾ cup of skim milk and optional maple extract, whisking until smooth. Let sit while preheating the skillet.
  2. Preheat a non-stick skillet over medium heat and lightly spray with cooking spray. Pour 2 tablespoons of batter onto the skillet, cook for 2-3 minutes until edges set and bubbles form. Flip and cook for another 60-90 seconds until golden brown.
  3. In a separate bowl, crack 2 large eggs and whisk. Heat another non-stick pan, spray with cooking spray, pour in eggs, and fold into a square as they set.
  4. To assemble, take one pancake bun, add the square egg filling, your choice of meat, then cap with another pancake bun and press gently.
  5. Serve warm, optionally drizzled with maple syrup or fresh fruit.
