- In a mixing bowl, combine 1 cup of Bisquick with 1 scoop of vanilla PEScience Select protein powder. Slowly add in ¾ cup of skim milk and optional maple extract, whisking until smooth. Let sit while preheating the skillet.
- Preheat a non-stick skillet over medium heat and lightly spray with cooking spray. Pour 2 tablespoons of batter onto the skillet, cook for 2-3 minutes until edges set and bubbles form. Flip and cook for another 60-90 seconds until golden brown.
- In a separate bowl, crack 2 large eggs and whisk. Heat another non-stick pan, spray with cooking spray, pour in eggs, and fold into a square as they set.
- To assemble, take one pancake bun, add the square egg filling, your choice of meat, then cap with another pancake bun and press gently.
- Serve warm, optionally drizzled with maple syrup or fresh fruit.
