  • 1 small Red Onion Green onions can be a milder alternative.
  • 1 small Jalapeño Omit for a milder salsa.
  • 1 tablespoon Fresh Cilantro Parsley can be used if you don’t like cilantro.

Step-by-Step Instructions
  1. Prepare Mango Salsa by dicing mango, red bell pepper, and red onion. If using, chop jalapeño. Combine in a bowl with lime juice, cilantro, and salt. Let sit for 10 minutes.
  2. Marinate Salmon by whisking olive oil, garlic powder, paprika, salt, and black pepper in a bowl. Rub mixture on salmon fillets and let rest for 5 minutes.
  3. Grill Salmon on preheated grill for 5-6 minutes on each side until opaque and flaky. Use a spatula to flip.
  4. Assemble & Serve by placing grilled salmon on a plate and topping it with mango salsa.
