Ingredients
  

For the Chicken Marinade
  • 1 lb Chicken breast Substitute with tofu for vegetarian option.
  • 1/4 cup Maple syrup Use agave syrup for vegan option.
  • 2 tbsp Sriracha sauce Replace with a milder sauce if necessary.
  • 2 tbsp Soy sauce Use tamari for gluten-free option.
  • 2 cloves Garlic (minced) Fresh garlic is preferable.

  • 1 tbsp Vegetable oil For greasing the grill.
For the Coconut Rice
  • 1 cup Jasmine rice Brown rice can be used for a whole grain option.
  • 1 can Coconut milk Coconut cream can be used for richness.
  • 1 cup Water
For the Salsa
  • 1 cup Mango (diced) Can be replaced with peach or pineapple.
  • 1 medium Avocado (diced) Substitute with cucumber for crunch.
  • 1/4 cup Red onion (finely chopped) Sweet onion is a milder alternative.
  • 1/4 cup Fresh cilantro (chopped) Omit if not preferred.
  • 1 tbsp Lime juice Use lemon juice if lime isn’t available.
For the Chili Mayo
  • 1/2 cup Mayonnaise Use Greek yogurt for a lighter option.
  • to taste tbsp Additional sriracha Adjust to taste.

Method
 

Preparation
  1. In a large mixing bowl, combine chicken breast, maple syrup, sriracha sauce, soy sauce, minced garlic, salt, black pepper, and vegetable oil. Stir well and marinate for at least 30 minutes.
  2. Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
  3. Thread the marinated chicken onto skewers or place directly on the grill. Cook for about 3-4 minutes per side.
  4. To make the coconut rice, rinse jasmine rice until the water runs clear. Combine with coconut milk, water, and a pinch of salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  5. In a mixing bowl, add diced mango, diced avocado, red onion, cilantro, and lime juice. Toss gently with salt.
  6. Whisk together mayonnaise, lime juice, and additional sriracha in a small bowl.
  7. Serve by dividing coconut rice in bowls, topped with grilled chicken, mango avocado salsa, and chili mayo.
