  1. Start by cleaning your fresh squid tubes thoroughly. Using a sharp knife, make shallow cuts in a crisscross pattern across the tops of the tubes to enhance flavor and prevent curling during grilling. Once prepared, use paper towels to pat the squid dry, ensuring they're moisture-free for optimal grilling.
  2. Heat a skillet over high heat and add 1 tablespoon of olive oil, allowing it to reach a shimmering state. When the oil is hot, carefully place the squid in the skillet. Grill each side for about 2 minutes or until you see a beautiful char develop, signaling they’re ready to flip. Remove the squid from the pan, and sprinkle a generous amount of rock salt to enhance their flavor.
  3. In the same skillet, lower the heat to medium and add another tablespoon of olive oil. Once warmed, toss in minced garlic and chopped red chili, sautéing them together until the garlic becomes slightly golden, which should take around 1-2 minutes.
