Ingredients

For the Dressing
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic minced
  • 2 tablespoons capers drained
  • 0.25 cup red onion thinly sliced
  • 2 tablespoons parsley finely chopped
For the Fish
  • 750 grams fresh fish fillets like snapper or cod
  • to taste sea salt
  • to taste ground pepper freshly cracked

Equipment

  • Medium Bowl
  • large sauté pan

Method

Step-by-Step Instructions
  1. In a medium bowl, whisk together the olive oil, apple cider vinegar, and minced garlic. Add a pinch of sea salt and pepper, then fold in the capers, red onion, and parsley. Set aside.
  2. In a large sauté pan, heat the olive oil over medium heat for about 2 minutes. Add a small knob of butter until it melts and swirls to create a foamy base.
  3. Season fish fillets with sea salt and pepper on both sides. Place them in the hot oil and cook for about 3-5 minutes, flipping halfway, until golden and flaky.
  4. Transfer cooked fillets to paper towels to absorb excess oil, then arrange on a platter. Spoon dressing generously over the fish.
  5. Let the dressed fish rest for about 15 minutes before serving to absorb the flavors.

Notes

For best results, allow the fish to reach room temperature before cooking, and ensure the oil is hot enough to prevent sogginess.
