  • 2 cloves Garlic use fresh for best results
  • 3 scallions Scallions (Green Onions) use both white and green parts
  • 2 tbsp Lemon Juice & Zest brightens the dish
For the Creaminess
  • 1/2 cup Parmesan Cheese ensure to stir continuously for melting
  • 4 tbsp Olive Oil choose high-quality extra virgin
For the Crunch
  • 1 cup Breadcrumbs toasted for a crunchy topping

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water. Pulse breadcrumbs until coarse crumbs.
  2. Blanch the broccolini for 2 minutes, then transfer to ice water.
  3. Toast breadcrumbs in a skillet with olive oil for 3-5 minutes.
  4. Char the broccolini in the same skillet for 2-3 minutes.
  5. Cook linguine in boiling water for about 9-10 minutes.
  6. Sauté scallions and garlic in butter for 2-3 minutes.
  7. Add reserved pasta water and simmer, then stir in linguine and cheese.
  8. Fold in the charred broccolini and serve topped with breadcrumbs.
