Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
  2. In a blender, combine the overripe bananas, cottage cheese, eggs, maple syrup or honey, almond butter, and vanilla extract. Blend until smooth.
  3. Add the oat flour, baking powder, baking soda, optional cinnamon, and sea salt to the blender. Blend on low until just combined.
  4. Gently fold in the chocolate chips using a spatula.
  5. Pour the batter into the prepared loaf pan, smoothing the top. Optionally sprinkle extra chocolate chips on top.
  6. Bake for 45-48 minutes, or until a toothpick inserted into the center comes out mostly clean.
  7. Allow the bread to cool in the pan for about 20-30 minutes before slicing.
