Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
- In a blender, combine the overripe bananas, cottage cheese, eggs, maple syrup or honey, almond butter, and vanilla extract. Blend until smooth.
- Add the oat flour, baking powder, baking soda, optional cinnamon, and sea salt to the blender. Blend on low until just combined.
- Gently fold in the chocolate chips using a spatula.
- Pour the batter into the prepared loaf pan, smoothing the top. Optionally sprinkle extra chocolate chips on top.
- Bake for 45-48 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Allow the bread to cool in the pan for about 20-30 minutes before slicing.
