  • 1/2 cup Peanut Butter Substitute with almond or sunflower seed butter for nut-free
  • 1/4 tsp Salt Use kosher or sea salt for best taste
  • 2 tbsp Agave Syrup Can substitute with honey or maple syrup
For the Coating
  • 1/2 cup Dry-Roasted Unsalted Peanuts Crushed nuts or desiccated coconut can be used as alternatives

Step-by-Step Instructions
  1. Soak the dates in hot water for about 5 minutes, then drain and set aside.
  2. In a food processor, combine the chickpeas, softened dates, cocoa powder, peanut butter, salt, and agave syrup. Blend until smooth.
  3. Transfer the mixture to a bowl and refrigerate for approximately 20 minutes.
  4. Shape the chilled mixture into 16-18 small balls, about the size of a tablespoon.
  5. Chop the dry-roasted unsalted peanuts in the food processor until finely crushed.
  6. Roll each truffle in the chopped peanuts until well-coated.
  7. Store the truffles in an airtight container in the refrigerator until ready to serve.
