Step-by-Step Instructions
  1. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  2. Add in the eggs and vanilla extract, blending well until fully incorporated.
  3. Gradually mix in the flour and brewed coffee until the dough is smooth.
  4. Divide the dough in half; add more brewed coffee to one half and mix.
  5. Gently fold the two doughs together to create distinct swirls.
  6. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Scoop dough and shape into balls; place on the baking sheet with space in between.
  9. Bake for 12-15 minutes or until edges are golden brown.
  10. Cool on the tray for 5 minutes before transferring to a wire rack.
