Ingredients

For the Soup
  • 1 piece Fresh Ginger offers a warm, spicy kick; fresh is best for full flavor.
  • 4 cloves Fresh Garlic brings depth and aroma; use garlic powder in a pinch.
  • 3 tablespoons Red Curry Paste the star ingredient providing bold, tangy heat.
  • 2 cans Coconut Milk adds creaminess and richness; opt for light coconut milk for a lower-calorie option.
  • 2 tablespoons Lime Juice enhances flavors with acidity; fresh lime is optimal for brightness.
  • 1 bunch Fresh Cilantro brightens the entire dish; swap with green onions for a different profile.
  • 1 pound Chicken Breast gives the soup its protein; substitute with tofu for a vegetarian option.
  • 2 cups Mixed Vegetables introduce color and nutrients; seasonal veggies can be substituted.
For the Noodles
  • 8 ounces Rice Noodles the perfect base for the soup; feel free to use egg noodles or whole wheat noodles for variety.

Method

Step‑by‑Step Instructions
  1. Start by washing and chopping your mixed vegetables into bite-sized pieces. Mince a two-inch piece of fresh ginger and four garlic cloves. Slice the chicken breast into thin strips.
  2. In a large pot, heat two tablespoons of oil over medium heat until shimmering, about 2 minutes. Add the sliced chicken, spreading it out in a single layer. Sauté for 5 to 7 minutes, stirring occasionally.
  3. Once the chicken is golden, add the minced ginger and garlic to the pot. Cook for an additional 1 to 2 minutes, stirring constantly until the mixture becomes fragrant.
  4. Stir in 3 tablespoons of red curry paste. After about 1 minute, pour in two cans (13.5 ounces each) of coconut milk and the juice of two limes. Add your chopped vegetables and mix thoroughly.
  5. Reduce the heat and let the soup simmer, uncovered, for 10 minutes.
  6. While the soup is simmering, bring a separate pot of water to a boil and add the rice noodles. Cook according to the package instructions, usually about 4 to 6 minutes.
  7. Once the soup has simmered and the flavors have developed, add the previously cooked noodles to the pot. Stir gently to combine everything, heating through for another 2-3 minutes.
