Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch baking pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine the quick oats, flour, ground cinnamon, baking powder, salt, and sugar.
  3. Pour in your chosen oil or melted butter into the dry mixture and fold until fully combined.
  4. Press two-thirds of the dough mixture into the bottom of the prepared baking pan.
  5. In a separate bowl, mix the diced strawberries with cornstarch and sweetener, coating the strawberries.
  6. Spread the strawberry filling evenly over the pressed dough in the pan.
  7. Sprinkle the reserved dough over the strawberry filling and press down gently.
  8. Bake for about 45 minutes or until the top is golden brown.
