  • 1 cup quinoa rinsed
  • 1 pound ground turkey or lean beef choose lean for a lighter dish
  • 1 medium onion diced, yellow or white preferred
  • 1 medium jalapeno pepper diced, remove seeds for milder flavor
  • 2 cloves garlic minced
  • 2 cups fresh spinach can substitute with kale
  • 2 tablespoons taco seasoning homemade recommended
  • 1 cup tomato sauce can substitute with salsa
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded or dairy-free for vegan
For the Topping
  • 1 cup cheddar and Monterey Jack cheese for topping

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine your taco seasoning ingredients thoroughly.
  3. Cook the ground turkey or beef in a skillet over medium heat for 5-6 minutes, breaking it apart until browned.
  4. Sauté diced onion and jalapeño in the same skillet for 5-10 minutes until the onion is translucent.
  5. Add minced garlic and fresh spinach, cooking for an additional 2-3 minutes until spinach wilts.
  6. Blend the sautéed veggie mixture with cooked quinoa, taco seasoning, and half of the shredded cheese.
  7. Transfer the mixture to an 8x8 casserole dish and smooth the top.
  8. Sprinkle the remaining cheese over the top and bake for 20 minutes.
